Make a bunch early, make seasoned chesses, bring toasted naan in towel

  • Cure Salmon with skin in ¼ cup sugar
  • Wrap in plastic, poke holes below through skin
  • Rest in fridge for 3 days not sitting in liquid
  • Rinse, reseason with salt and pepper medley, slice thin on naan with cream cheese
