However, use Kenji's original recipe:

  • 1/4 cup of rice vinegar
  • 3 tablespoons sugar
  • a teaspoon of salt
  • a 2x2 strip of konbu per cup of uncooked rice

I subbed the kombu and salt with 1/2 teaspoon dashi powder. Was good, maybe could use more salt.

New recipe is too much vinegar (double)
