Got the flounder/sole from City Fish at Heart of the City Farmers Market today, $5/lbs, 2.2lbs fish.
Fillet seems easy: https://www.youtube.com/watch?v=IKTt4BtGN3Q
Seems like I should either scale it then bread it for frying, or remove the skin. I'm gonna remove the scales with a spoon or back of my knife. https://www.reddit.com/r/FishingForBeginners/comments/198xkpk/scaling_vs_filet_with_skin/
I prefer buying fillets. Scaling is easy but a bit messy. Deboning is super annoying and gross. Fish tasted good though! I used corn meal mix and it was crispy. However, we were stuck using stainless steel and that was hard. I’d prefer non-stick.
