Pickled Red Onion

While cooking, it’ll smell awful and taste pretty sour and make you cough, tastes way better cooled down. Best bet is to boil until soft then turn off and let it sit to taste.

I think cilantro and sugar was super important to round out the taste.

One red onion sliced thin
¾ cup of distilled white vinegar
¼ cup water
Some salt
4 tbsp white sugar or honey
Grind in some black pepper
Bring to boil for like 15 or whatever minutes then turn off
Stir in chopped cilantro (leaf and stem) at the end
