Recipe is good overall, but I found the chicken to be cooked almost through and I only baked for like 5 minutes and it was too much. I should target 140 or 145 and it’ll rise to 165. I baked to 165 cause of the cheese and that made the chicken a bit tough.
I found 1 cup in a 12 in skillet to be about half an inch of oil, which was plenty. 350 or 325 was a good temp to start at.
I used Trader Joe’s spicy chunky tomato sauce boiled for like an hour with extra sugar and ketchup.
Cheese was sliced and topped so it melted fast.
