Mashed Potato Cauliflower Ground Pork

I got my wisdom teeth removed with a biopsy on the back roof of my pallet making chewing as well as swallowing difficult.

Baebee Jenny found an old pack of instant mashed potato flakes in the pantry and mashed some leftover romanesco (green cauliflower) that I had blanched and then stir fried into crispy ground pork seasoned with aromatic oil of chives, star anise, and japanese peppers. Probably sugar salt and corn starch slurry too. The resulting mash was really delicious and flavorful and easy to consume. I think the ground pork is better than traditional bacon. The instant mashed potato’s serves as a good seasoned base. The cauliflower adds a fun texture and color and makes me feel better about myself.
