We did the NYT recipe using coconut milk and it’s really good. Did the whole braising thing, worth it. Added thinly sliced onion and bok choy though and that was pretty good. Chicken is a bit mealy so maybe remove from pot a bit early? Used japanese dried peppers, 4, good amount, fairly spicy. Consider chopping garlic into slightly smaller chunks instead of whole, they were a bit big. No need to mince though.
1c coconut, half vinegar. We targeted the 4 servings of sauce but only 2 servings of chicken.
