Oyakodon (Japanese Chicken Egg)

I usually just use Serious Eats recipe pretty closely, but mess with soy sauce and sugar

Double the sauce

In NYC:
Start rice!

  • 1 cup salty chicken broth instead of dashi
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce addition
  • 2 tbsp turbinado sugar
  • 1 small onion instead of one big onion
  • Omitted scallions, mitsuba, and togarashi
  • Seasoned with white and black pepper instead

Turned out pretty good! Needs more sauce, I think doubling the sauce volume is ideal. No concern of over simmering onion. Worcestershire was a good add.

Consider freezing chicken slightly to firm up for slicing.
