Johanns recipe from Birkilauf Iceland
Johann Thor - Birkilauf Nature Lodge
Ingredients:
3 ripe bananas
100 grams Margarine/Shortening
2 small eggs or 1 large
1 heaped teaspoon baking soda
1 heaped teaspoon table salt
100-150 grams sugar (the more ripe the bananas - the less sugar)
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 2/3 cups White Bread Flour ~200 grams
- In a bowl, mash the bananas with a hand blender, place in a mixer
- Add the butter, melted slowly to avoid separation, mix slowly so it cools down.
- Add baking soda, salt, sugar while mixing.
- Whisk the eggs in a bowl and then add slowly into the mixer while running.
- Add vanilla and lemon extract.
- While running slowly, add the flour in parts. Each time you add a little flour, increase speed and mix completely before adding some more. Repeat process until all the flour is added and the mix is perfect.
- Pour the mix into a baking form lined with baking paper.
- Place into a preheated convection oven at 175C
- Bake for one hour, or until you can stick a toothpick into the middle, and it comes out clean.
- Take the form out of the oven and let it sit on the table for 5 minutes.
- Lift the bread with the baking paper out of the form.
- Remove the baking paper, and let the bread cool on a rack, until completely cooled.
