Jenny doesn’t like mackerel in sushi and thought this was good but weird. It’s appetizing but she wouldn’t choose it.
Inspired by https://www.justonecookbook.com/grilled-mackerel-saba-shioyaki/ japanese style grilled mackerel which is usually a fillet
1 mackerel was about 1.2 lbs. which was sufficient for 2 people.
Took the whole cleaned fish and drizzled like 1.5 tbsp xiaoxing wine on top and shook it all over inside and out via a metal bowl. Then drained.
Then sprinkled inside and out with a bit of salt as of im gonna eat it. Let it sit for 20 minutes.
Preheat oven to 450F
Pat dry and place on parchment paper, sprinkle with garlic powder and black pepper . Flip half way and broil. Oven until 105 and turn off. Let rise to 120. Next time consider just pulling at 105z
Flip and flame thrower. Serve on plate with parchment paper.
I made a sauce of one part soy sauce, ¼ part fish sauce, ½ part sugar, ½ part seasoned rice vinegar. And 3 part water.
