I made striped bass. Got 1 fillet so about 1.3 lbs $20. I cut it into 4 chunks. I started with a scallion, garlic, ginger, and red pepper flakes and salt paste and poured hot oil over. I should have used much hotter oil, maybe 420F. I tried 300 and 350 but both were quite tame. Or I should have mixed it into the pan instead.
I dipped the fish skin side into the ginger oil and placed into the same oil pan, then coated the top.
I should have crispy fried the bottom on high first and then broiled the top, also on high.
At 7-8 minutes in the oven, it was a LITTLE over cooked, but it was good, not particularly dry.
4 minutes on stove, 2 minutes in broiler would have been good. Preheat the broiler more next time too.
