- Fry 1 small onion, finely chopped in 1 tablespoon lard or vegetable oil
- Rehydrate 5 large ancho/poblano chiles, 3 dried mirasol/guajillo chiles, 2 pasilla/negro chiles stems and seeds removed, and 2 morita/smoked jalapeño/chipotle chiles in 1½ cups low-sodium chicken broth
- Toast, grind, and mix in 1 teaspoon coriander seeds, 1 tablespoon cumin seeds
- Blend with 8 garlic cloves, peeled and 1 teaspoon crushed Mexican or Italian dried oregano
