Lemon Ricotta Pancakes as recommended by Jenny

We made some with pancake mix (6 6" pancakes) with quarter cup of goat cheese ricotta. Goat cheese ricotta is a lot thicker though so that was meh. Maybe yogurt next time. Also the blueberry acai Hawaiian luau mix was like bubblegum, crazy artificial smells, very strong.

Consider mixing in polenta or grits or cornmeal like Padrecito does, so good. A bit gritty and corny which is a nice valet texture like corn bread but softer and fluffier
